Happy Children’s Day to ALL… I’m always late to the PARTY.. I’ve been so busy since morning. Busy baking cake for the kids. I’m up with a simple recipe – Black Forest Pastrty.

Black forest pastry is nothing but a Black forest cake cut into square or rectangle pieces. Don’t be alarmed with the amount of ingredients I’ve used for this recipe.I made it in a large 10″x 10″ cake tin so that I can feed all the neighborhood children as well. After all, it’s Children’s Day.

(10”x10” square cake tin)

450 grams of eggs (approximately 9 or 10 large eggs)
240 grams of sugar
150 grams of all purpose flour
30 grams of corn starch
55 grams of cocoa powder
55 grams of butter
55 grams of milk

Sugar syrup

1 cup sugar
1 cup water

Frosting and filling

2 cups of Whipping cream
A pack of Fresh strawberries
Grated chocolate to decorate the top

Line the baking tin with parchment paper.
Preheat the oven at 180 degree C.
Sift the flour, corn starch and cocoa powder and set aside.
Take milk and butter in a small bowl and heat it in a microwave until butter melts. (or you can heat it after the next step which I always do)
Beat the eggs and sugar in a large bowl over a double boiler.
Beat until it reaches the body temperature.
Remove from heat and beat for another 10 minutes. (After removing the big bowl from heat, you can place the bowl of milk and butter in the hot water, so that the butter melts by the time we cream the eggs and sugar)
You will notice that the mixture will have turned into pale yellow.
Gently fold in the sifted flour. Use a spatula.
Add the warm milk and fold in gently.
Bake for 35-40 minutes or until a toothpick inserted comes out clean.
Remove from the oven and invert it on to a cooling rack.
Prepare sugar syrup by boiling water and sugar.
Let it cool completely.
Next, in a stand mixer or with an electric beater, beat the whipping cream until stiff peaks. DO NOT OVERBEAT.
Chop strawberries for filling. Reserve a few for final decoration.
Slice cake in 3 layers.
Place one slice onto a cake board and apply sugar syrup.
Put a dollop of whipping cream and spread evenly.
Put some chopped strawberries on top.
Repeat with the other 2 cake slices.
Sprinkle some chocolate shavings on top.
Pipe some whipped cream and put a slice of strawberry and VOILA.
You’re done.

Cut into rectangle pieces and SERVE.

Kids enjoying the cake…

Sorry for the pics overdose. Couldn’t help it. Byeee…
