ARABIAN RICE

               First of all wishing everyone a very Happy New Year. Hope everything goes well for all of you. Well, do you guys have any new year resolutions. Were you able to keep up your last year’s resolutions. I’m not a kind of person who makes resolutions and I don’t believe in one. You either do it ‘now’ or ‘never’. Only one Duaa to Allah. May each day bring happiness to me and my family and everyone out there. InShaAllah. And as my husband says, everything will be fine if you pray Fajr prayer on time”.

               So, here is my first post for 2017. It’s a very simple dish. I don’t know if its an authentic or traditional recipe. But after going through so many recipes and trying out some of them, this is what I came up with. So without any boring talks, let’s go straight to the recipe.

 

Ingredients

2 cups of Basmati Rice

3 cups of boiling water

A small piece of cinnamon

2 cardamoms

3 cloves

Salt to taste

2 tablespoon oil

½  a teaspoon of orange red food colour.

Method

Wash and soak rice for 15 minutes.

Drain the water and set aside.

Heat oil in a skillet.

Add cinnamon, cardamom and cloves.

Sauté till its aromatic.

Add the rice and keep stirring for about 10 minutes.

Simultaneously boil the water. Add salt to the water.

Pour the boiling water to the rice. You will be able to hear a sizzle as soon as you add water.

Mix well and quickly adjust salt.

Turn the flame to low and cover the skillet.

After 3 minutes, stir the rice and sprinkle some orange red food colour and cover again. Do not mix at this point.

After 2 or 3 minutes, stir the rice once again. The water will have evaporated by now.

Serve hot with tomato chutney and some yummy kababs or fried chicken.
