HAPPY NEW YEAR / CHOCOLATE MUD CAKE

Happy New Year to all my friends. This is going to be my last post of 2013, obviously. I was very lazy today and was not in a mood to do anything, not even baking. Suddenly I changed my mind. I decided to bake a cake at the very last moment. And so I’m posting this at the very last moment of the year.

Here’s is simple cake yet again…CHOCOLATE MUD CAKE.

I wanted this cake to look extraordinarily beautiful. But nothing worked out as intended. White chocolate ditched me. “2” is sinking. All those stories later.

Ingredients

Maida   –   2 cups

Cocoa powder   –   ½ cup

Baking soda   –   1 teaspoon

Unsalted butter   –   250 gms (cut into small cubes)

Dark chocolate   –   250 gms (grated)

Coffee powder   –   ½ – ¾ tablespoon

Boiling water   –   ¾ cup

Sugar   –   ½ cup

Eggs   –   3

Chocolate ganache

Dark chocolate   –   200 gms

Fresh cream   –   ½ cup

Method

Step 1

Grease a 9/10 inch cake tin with butter and line it with parchment paper or dust it with a little cocoa+flour mixture. Pre-heat the oven to 175°C.

Step 2

Take a medium sized bowl. Mix sugar, coffee powder and boiling water. Mix well till the sugar dissolves. Set aside

Step 3

Take a big wok. Melt butter and dark chocolate in it. Stir slowly till chocolate melts completely. Now you will have a glossy mixture. Transfer it to a big bowl and add the coffee mixture of the Step 1. Mix well till you get a slight creamy texture. Let it cool.

Step 4

Sift maida, cocoa powder and baking soda. Fold it in the above mixture without any lumps. Now add eggs one at a time and mix it well. Transfer it to the prepared cake tin and bake for about 50 – 55 minutes.

When the cake is done, invert it on a wire rack and let it cool down completely.

Chocolate ganache

Grate the chocolate and place it in a bowl. Boil fresh cream and pour it onto the grated chocolate. Let it stand for 2 minutes. Now mix well and pour it over the top of the cake. Place a large bowl under the wire rack to collect the chocolate dripping.( you can lick it later)

Finally transfer the cake onto a wide plate. You’re done. Now attacking the cake is all you have to do.

  1. As a child, mud cake was a favorite, and only for special occasions. I haven’t had a mud cake since being little, I can’t wait to try one, I mean make one. You have filled me with many memories this morning. Thanks so much.
