I’ve never heard of lachha paratha until I saw Junior Masterchef. A contestant in junior masterchef said that she knows how to cook various kinds of foods including Lachha Paratha and the judges were like “ohh wow – Lachha Paratha”. I wondered, now wot sort of a paratha was this. And ofcourse I found it out too…thanx to google.
It’s a normal kinda dough to which adding curd is optional, I’ve added it though and it’s first rolled out. Then it’s folded in a zigzag method and then again into a circle. Roll it out again, cook it in a tawa and there’s your Lachha Paratha.
(added a little bit of butter on top to make it look “good”…but it looks otherwise)
(makes approx. 10)
Wheat flour (aata) – 1 ½ cups
All purpose flour (maida) – ½ cup
Curd – ½ cup
Ghee – 2-3tbsp (plus you’ll need extra)
Salt – to taste
Warm water – as per requirement
Mix all the ingredients and knead to a medium soft dough. Set aside for 20 – 30 minutes.
Divide the dough into 10 equal portions.
Take a portion and dust it with flour and roll it out thinly.
Apply ghee on one side and dust some flour on top of it.
Fold it in a zig-zag manner and then fold it into circle.
Again roll it out. This time it shouldn’t be too thin and neither it should be too thick.
Heat a tawa/flat pan and cook the parathas by flipping both the sides.
