CHICKEN NOODLES

               Now after a heavy dose of vegetarian dishes, it has to be something lite. And I can’t think anything other than noodles now. Only once in a year I can survive with heavy vegetarian meals and that is during the Onam. And on the rest of the 364 days I can happily have noodles…slurp… Well…don’t ask me how healthy it is. It should be healthy rite. Wot do you guys think?

               I think this is one of easiest foods to make. I love my noodles with loads of veggies, eggs and chicken. Well…a plate of noodles is irresistible at any point of time…

Ingredients

Egg noodles – 500-600 gms

Chicken (cut into small 1” piece ) – 2 cups

Carrot – 2 cups

Green capsicum – 1 cup

Red capsicum – ½ cup (optional)

Yellow capsicum – ½ cup (optional)

Cabbage – 1 ½ cups

Onion – 1 big (thinly sliced)

Chopped garlic – 2 tbsp

Spring onion – ½ cup

Celery – ¼ cup

Eggs – 6 + (1 for marination)

Pepper powder – ½ tsp

Corn flour – 1 tbsp

Soya sauce – 1 tbsp

Salt – to taste

Refined oil – nearly 1 cup

Note :- if u don’t have red and yellow capsicums, then take 2 cups of green capsicum

pretty fascinated with these capsicums…this is for the first time i’m using this…would u believe ? 😀

Method

Break an egg into a small bowl and lightly beat with a spoon. Add pepper powder and corn flour and mix well. Marinate the chicken pieces in it for 15-20 minutes.

Cook noodles as per the packet instructions. Transfer it to a tray and allow it to cool.

Cut all the vegetables into thin long stripes except spring onion and celery. Cut spring onions and celery diagonally.

Cook the chicken and set aside.

Heat ½ cup oil in a large wok. Add chopped garlic and sauté for 30 seconds.

Add onion and sauté for about a minute or two.

Break eggs into it and scramble it.  The eggs will stick to the onion.

Add carrot and sauté in high flame for a couple of minutes. Then add all the capsicums and sauté for another couple of minutes. The colours of the veggies shouldn’t change.

If u feel the oil is less and the veggies are sort of dry, then add another ¼ cup oil and so on.

Now add cabbage and celery and mix for about 2 minutes or so.

Add the cooked chicken and mix.

Add soya sauce, mix well. Add salt and adjust the taste.

Add the cooked noodles little by little and mix well.

Turn off the flame.

Finally heat 2 tbsp of oil in a pan. Add spring onion and sauté it for abt 15-20 seconds.

Add it to the noodles and mix.

YUMMILICIOUS CHICKEN NOODLES are READY to be EATEN
