CHICKEN PIE

                                What to tell about this chicken pie. This is one of the best foods I’ve ever had. You have to eat it to believe it. This is a complete meal in itself… The chicken, various types of vegetables, pasta etc makes this dish absolutely rich. The cheese on top is yummy. It reminds me of pizza… This dish requires quite a lot of preparation time, but I tell you it’s worth it. So here’s what you will need :-

Ingredients

Boneless chicken(cut into small pieces)   –   ½ kg

Lemon juice   –   of 1 lemon

Maida   –   ¾ tbsp

Red chilli powder   –   ¾ tbsp

Salt   –   to taste

Pepper powder   –   ¾ tsp

Refined oil   –   1 cup

Potato (cut into small cubes)   –   2 medium

Carrot (cut into small cubes)   –   2 medium

Onion (cut into small cubes)   –   2 medium

Tomato (deseeded and cut into small pieces)   –   2 medium

Cooked macaroni   –   2 cup

Cauliflower (cut into small pieces)   –   ½ cup

Mozzarella cheese   –   as per requirement

White Sauce

Butter   –   3 tbsp

Maida   –   2 tbsp

Milk   –   1 – 1 ½ cups

Chicken stock   –   1 cup

Pepper powder   –   1 tsp

Salt   –   to taste

Method

Mix lemon juice, maida, red chilli powder, salt and pepper powder in a bowl. Marinate chicken pieces in it for 2 hours.

Heat a wok. Add 1 tbsp refined oil and ½ tsp pepper powder. Add in cooked macaroni and sauté.

Heat 1 cup refined oil in a heavy bottomed vessel. Fry marinated chicken in it.

Remove chicken and fry vegetables in that oil. (potato, carrot and cauliflower respectively)

After that fry onion till light brown and at last fry tomatoes.

Set the baking tray. We can either bake this in a microwave or in an otg. I baked it in an otg.

Apply some oil in the baking dish. At first, spread the fried chicken pieces in the bottom. Then spread a little macaroni.

Repeat this with the vegetables as well. Spread potato, then a little macaroni, then carrot, again a little macaroni, then cauliflower, a little macaroni, then onions and tomatoes and then the remaining macaroni.

Now prepare white sauce and pour it on the top of the dish and tap it on the table, so that the white sauce reaches the bottom of the dish.

Now  grate some mozzarella cheese and cover the very top.

If in a microwave, bake in HIGH for 10 minutes.

If in an otg, preheat the oven in 170°C for 10 minutes. After 10 minutes, reduce the temperature to 150°C and bake for about 1 – 1 ¼ hours.

 To prepare white sauce

Heat a heavy bottomed saucepan and melt butter in it.

Add maida in it and stir till the raw smell evaporates. Add in the chicken stock and mix well. No lumps should be there.

Now add milk and stir continuously. It will start to thicken. When it reaches the custard consistency, turn off the heat.
