CHICKEN SHAWARMA

                         Shawarma is made by alternately stacking strips of fat and pieces of seasoned meat (beef, lamb or marinated chicken) on a rotisserie. An onion, a tomato, or a halved lemon is sometimes placed at the top of the stack for additional flavoring. The meat is roasted slowly on all sides as the stick rotates in front of a flame for hours.

                         Shawarma is a popular street food served with many different garnishes and toppings. Needless to say this is the best street food ever. And it’s even best when it’s prepared at home. I guess it’s more healthy and hygienic.

Ingredients

1.  Boneless chicken (cut into thin strips)  – 250 gms

2.  Lemon juice   –   slightly less than 1/4 cup

3.  Yogurt   –   1/4 cup

4.  Minced garlic   –   1 tbsp

5.  Salt   –   1 tsp

6.  Ground cardamom   –  1/4 tsp

7.  Seven spices *  –   1/4 tsp

8.  Paprika   –   1/4 tsp

9.  Coriander leaves (chopped)   –   2 tbsp

10. Cayenne pepper   –   1/8 tsp

11. Cinnamon   –  1/8 tsp

12. Cabbage (finely chopped)

13. Tomato (finely chopped)

14. Olive oil   –   3 tbsp

15. Kuboos (khubz)    –   6

16.  Mayonnaise   –   accordingly

Directions

Combine all ingredients from 1 to 11 in a large bowl, cover and let marinate for 2 hours in the refrigerator.

Heat a pan and add olive oil, add chicken and let cook for 10 minutes until chicken turns brown in colour, cook for an additional 2 minutes if necessary.

Turn off the flame and add cabbage and tomatoes and mix well.

To make sandwich, use kuboos, spread mayonnaise on top of it, add chicken mix and roll.

*Seven spice

(this is one of the core ingredients according to me)

Black pepper corn   –   2 tbsp

Paprika   –   2 tbsp

Ground cumin   –   2 tbsp

Ground coriander   –   1 tbsp

Ground cloves   –   1 tbsp

Ground nutmeg   –   1 tsp

Ground cinnamon   –   1 tsp

Ground cardamom   –   1 tsp
